Candied fruit

Slow candying methods that honor tradition, preserving the authentic flavor, aroma, and texture of fruit.

The Cesarin art

For over a century, Cesarin has been perfecting the art of candying fruit. Using the refined French candying method, we patiently replace the water in the fruit with sugar, day after day, in a gentle osmosis that never stresses the raw material. This slow approach allows us to preserve the fruit’s essential oils, natural aromas, and vibrant colors, creating a balanced sweetness that is never cloying.

Assortment

Cesarin candied fruits are available in one of the most comprehensive assortments on the market, each carefully selected for quality and processed to enhance its authentic character. From small cubes perfect for doughs to whole slices ideal for decoration, every product is crafted to inspire both traditional and contemporary creations.

We were also among the first to replace citric acid with lemon juice and to use only natural flavorings, ensuring clean-label excellence without compromising on taste.

Masters of fruit artistry since 1920

Cesarin candied fruit is a natural match for iconic Italian bakery such as panettone and colomba, where citrus notes enhance the dough with freshness and persistence. It also shines in dragées, pralines, gelato inclusions, and modern pastry decorations, offering chefs the freedom to innovate while relying on the stability and integrity of the fruit.
