A Celebration of excellence and discovery

On October 19th, 2025, at the iconic Hotel Principe di Savoia in Milan, Domori and IRCA Group welcomed over 150 pastry chefs, chocolatiers, and Michelin-starred professionals to an authentic Domori Experience.


A unique occasion to explore the soul of Domori Professional, the line dedicated to those who demand purity, precision, and performance from their chocolate.

The experts' talk

The event featured Gianluca Franzoni, Founder and President of Domori and tireless ambassador of a new cacao culture; Massimiliano Alajmo, three-Michelin-starred chef of Le Calandre; and Luigi Biasetto, internationally renowned Master Pastry Chef. Together, they engaged in an open dialogue between tradition and innovation, exploring the complexity of fine cacao, the importance of preserving genetic varieties, ethical supply chain practices, and the role of chocolate in haute cuisine and pastry.

In my long research on cocoa, I have always tried to turn complexity into harmony, following a scientific approach that enhances balance and purity in the raw material. Bringing together growers and creators means sharing the same vision: chocolate as a language of authenticity, innovation, and beauty.

The tasting journey

Guests embarked on a tasting path from South America to Africa, discovering the aromatic identity of Domori’s single origins - from the floral notes of Sambirano 72% to the deep persistence of Sur del Lago 72% and the rare harmony of Criollo Chuao 75%. Each tasting station became a story of purity, elegance and technique.
