A graduate of a gastronomic technical school, he obtained the title of engineer in food technology and human nutrition at the Warsaw University of Life Sciences, defending his diploma thesis on the traditional Italian panettone. He is a participant and laureate of many competitions, including Bartolomeo Scappi in Castel San Pietro Terme. He gained his professional experience, among others, in the Michelin-starred Antica Corte Pallavicina restaurant and in the Sebastiano Caridi confectionery. He trained with such masters as Stefano Laghi, Piergiorgio Giorilli, Omar Busi and Ezio Marinato. He is passionate about food chemistry and classic Italian confectionery, primarily because of its simplicity, traditions and the use of selected products of good quality.
