Preparato stabilizzante in polvere a base di fibra vegetale solubile utilizzato per migliorare la struttura di gelati al cioccolato e alla frutta, conferendo compattezza e cremosità.

sciroppo di glucosio disidratato______________________ 105 g
zucchero________________________________________ 70 g

Preparazione a caldo. Frullare con mixer ad immersione il prodotto con le restanti polveri e con le gocce di cioccolato nell'acqua bollente, fino a completo scioglimento. Lasciare riposare per 30 minuti (ideale 2 ore) e poi gelare direttamente nel mantecatore. Prima di mantecare, è consigliabile rimescolare nuovamente la miscela.
